This Pineapple Ginger Smoothie is sure to brighten up your morning!
It’s definitely winter in the Pacific Northwest. Between the rain and the snow there isn’t much sunshine to be found this time of year. Nothing helps beat away those dreary winter blues like a bright, tropical fresh fruit smoothie.
Pineapple is the star of this smoothie. Pineapple is one of my favorite fruits to scoop up on sale and stash in my freezer. Chunks of pineapple freeze beautifully and can then be used in a variety of dishes.
Next up, toss in some tasty kiwi. My preference for this smoothie are Golden Kiwi’s, which I am usually able to find more readily in the Fall & Winter months. If you can’t find them, green will work as well.
My favorite flavor right now is fresh ginger. In tea, sauces, soups, smoothies anything! Ginger packs a flavor and nutritional punch and adds the perfect kick to the sweetness of the pineapple in this smoothie. Pop a little flax seed in there for some extra fiber and omega-3’s and you’re ready to kick start your day!
