The past few months I’ve been suffering from a bit of a creative block. Sometimes I get a little hard on myself over it. Then I remember I have 4 kids who are home with me all day, I spend 5 nights a week at work often not getting home until after midnight, and then there’s that little global pandemic thing. So I’ve decided not to be so hard on myself over the blog absence. So while, it’s taken way longer than I was hoping I’ve finally gotten back to my writing and to developing recipes. I started with a recipe I’ve had *almost* ready for over a year, these Frozen Strawberry Banana Chocolate Bites!
I wrote this recipe a year ago and they are a family favorite. These are a variation of one of the most popular recipes on my blog, these Frozen Peanut Butter Banana Balls.
The Strawberry Banana Chocolate Bites are easy and fun to make. They are healthy and made with completely whole foods. We loved the cacao nibs in these, but you could easily swap them for mini dairy free chocolate chips and the bites would still be a healthy treat.
Making the Frozen Strawberry Banana Chocolate Bites
These bites are a great recipe to let little hands help with. Kids will love helping make these as much as they love cooling off with them on a warm summer afternoon. As far as my kids are concerned these count as a full-fledged “junk-food” dessert. Thankfully they are so healthy that I can let them have as many as they want.
Start by pulsing your oats in a food processor, they don’t need to be fine, just roughly chopped. Then mash the bananas in a bowl. Stir in your ingredients, then form into a ball. Roll in the reserved oats and freeze for at least two hours, until the balls are nice and firm.
You can keep these in the freezer for up to a month, but they never make it more than a few days in my house!
