This Watermelon Smoothie is the summer drink you didn’t know you needed! Or maybe you did? Who knows?
A couple of weeks ago my local grocery store started stocking watermelons again and I’ve been buying at least 2 a week. Now I’m not talking delicious local seeded watermelon, but these will do until later in the summer when I can find local melons. If I can I always buy watermelons with seeds. Did you know that the seeds are edible? And contrary to the lore of my youth they will not make a watermelon grow in your belly. In fact, they are actually pretty good for you. You can roast them or just eat them raw. Plus, tossing them in a smoothie to be blended up is a great way to eat them without having to go through the extra work of roasting them or chewing them up raw.

I love the addition of fresh mint to this smoothie. Mint and watermelon are like a match made in food combo heaven! Mint is easily found in many grocery stores, BUT it’s not so easy to find it plastic-free. And when you can find it without plastic it’s usually pretty darn expensive.
Luckily there is a low-waste, cost-efficient alternative to shelling out lots of cash on mint through the summer! You can grow it. Now, this is only my second year of gardening (I’m kind of obsessed now) but I can tell you from my limited experience that mint is INCREDIBLY easy to grow. It’s also hardy in zones 3-11 and perfect for containers! If you want to try your hand at an herb garden, mint is a great place to start. You can find some great info on growing mint here.

Watermelon Smoothie
Ingredients
- 1/2 -1 cup Water
- 4 cups Frozen Watermelon
- 1 Banana
- 1/2 Lime juiced
- 6 small Mint Leaves or 3 large
- small handful Ice
