Breakfast sandwiches are my jam (as long as they don’t actually have jam)! I whipped this Vegan Bagel Sandwich up when we were on our summer vacation on Mt. Rainier. We needed a hearty breakfast before a big hike and I’d been on a bagel kick. They were a huge hit that day! I knew I needed to share this very east recipe.
These sandwiches are easily made with just one pan. Depending on your schedule, they may take a little too long for a weekday breakfast but are great for brunch or a weekend.
The Best Vegan Eggs
The ‘egg’ in these bagel sandwiches are tofu slabs rubbed with seasonings including kala namak or Indian Black Salt. Tasty in many dishes, this black salt is pivotal to making tofu eggs. Black salt has an egg-y, umami flavor that sets tofu egg dishes apart. Mix the salt with turmeric, onion and garlic powder and smoked paprika for a smoky, earthy and delicious tofu egg seasoning.
Rub the seasoning on the tofu and let all those flavors get to know each other while forming sausage patties with your favorite vegan sausage. You can use the ready-made patties if you prefer. Fry the sausage patties in a pan with just a little splash of oil until cooked through, flipping once. Once the sausage patties are cooked set them aside. Fry the tofu eggs in the same pan using the oil from the sausage. So good! In the last few minutes of cooking the tofu add sliced cheese to the slabs and cover, letting the steam melt the cheese.
Assemble your sandwiches on toasted bagels slathered with mayo. Pile on the sausage and cheesy eggs then top with creamy avocado. Add hot sauce if you want a little extra kick!

Breakfast Scramble with Tofu & Peppers
Vegan Bagel Sandwich
Ingredients
- 4 Vegan Bagels
- 1 Package Extra Firm Tofu pressed
- 1 14 oz Package Vegan Sausage I used Impossible Spicy Ground Sausage
- 4 slices Vegan Cheddar Cheese
- Mayonnaise
- Avocado
Tofu Egg Seasoning
- 1 1/4 tsp Kala Namak Black Salt
- 1 tsp Turmeric
- 1/2 tsp Smoked Paprika
- 1/4 tsp Onion Powder
- 1/4 tsp Garlic Powder
Instructions
- Slice pressed tofu into four slabs, cutting once lengthwise and then each piece in half
- In a small bowl mix tofu seasoning together then rub on all sides of tofu slabs. Set aside
- Heat a pan over medium high heat
- Form sausage into 4 equal sized patties
- Cook patties until completely cooked, about 15 minutes depending on the thickness of the patty, flipping half way through
- Set cooked sausage aside and lower heat to medium
- Add seasoned tofu to the pan and cook for 10 minutes, flipping half way through
- Top each tofu slab with a slice of vegan cheddar cheese, cover pan with a lid
- Cook for another 3-5 minutes allowing cheese to melt then remove from heat
- While cheese is melting toast bagels
- Spread mayo on half of each bagel
- Build bagel sandwiches by adding the sausage patty, then cheesy tofu followed with 1/4 – 1/2 an avocado. Top with optional hot sauce and the top half bagel.
