There is something you guys should know about me. I buy a lot of bananas, like A LOT. I usually grab at least 4 bunches a week. You’d think that would mean that we often have an abundance of brown bananas sitting on our counter at the end of the week threatening to draw fruit flies. Nope, my kids scarf those bananas down by the middle of the week. Most of the time.
On those occasions that they do leave a few bananas in the fruit bowl till they’re brown, we love a good loaf of this homemade Vegan Walnut
This dense, flavorful, banana bread is a perfect snack, breakfast or lunch box addition. It’s delicious served warm right out of the oven, heated up later or served at room temperature. I love slathering it in all-natural crunchy peanut butter and extra slices of banana! It’s incredibly filling and tasty!

This recipe also serves a great purpose for helping reduce food waste. If your family is like ours and you don’t ever have browned bananas check your local grocery store for a ‘last chance’ produce bin. A few of the stores around us have them and I can frequently find produce at drastically lower prices. You may find the perfect banana bread bananas and you don’t even to wait!
Banana Bread Recipe Notes
I use applesauce in my baking frequently in place of oil or added sugar. I usually use my own favorite homemade applesauce. Whether you make your own applesauce or use storebought make sure you’re using the unsweetened variety for baking.
This recipe also calls for coconut sugar. This is an ingredient that I was introduced to when I started baking vegan. Some say it’s a healthier alternative to regular table sugar. I looked into it briefly and from my limited research, my unprofessional opinion is that it may be marginally better for you but is certainly no ‘superfood’. It IS vegan though and since lots of white table sugar is made using bone char it’s nice to have in the cabinet. It’s also less sweet than cane sugar, which is why I originally decided to use it in this bread. I’ve never made this recipe with cane sugar but I imagine it would work.

Vegan Walnut Banana Bread
Ingredients
- 2 Flax Eggs 2 Tbsp Flax Meal mixed with 5 Tbsp water
- 2 Very Ripe Bananas Mashed
- 1/2 Cup Unsweetened Applesauce
- 1/4 Cup Coconut Sugar
- 1/2 Cup Plain Unsweetened Almond Milk
- 1 ½ Cup Whole Wheat Flour
- 1 ½ Tsp Baking Soda
- 1 Tsp Baking Powder
- 1/4 Tsp Salt
- 1/2 Cup Walnuts Roughly Chopped
Optional Toppings
- Extra Banana Slices
- All Natural Peanut Butter
Instructions
- In a large bowl whisk the water and flax meal together to make the flax egg, let sit for 5 minutes
- Preheat oven to 375°
- Line a loaf pan with parchment paper
- Add the banana, applesauce and coconut sugar to the flax egg and mix
- Add Almond Milk, mix
- In a separate medium sized bowl add flour, baking powder, baking soda and salt and mix together
- Add the dry ingredients to the banana mixture and stir until incorporated
- Gently fold walnuts into the mixture
- Pour into loaf pan and spread to even it out
- Bake for approximately 45 minutes, bread is done when you can insert a toothpick to the middle and it comes out clean
Notes
- Bread may need to be covered with foil halfway through baking to prevent the top from getting overly brown
- Cook times will vary, my oven seems to run a little on the cooler side so take care to check your Banana Bread
