Vegan Walnut Banana Bread
This tasty Vegan Walnut Banana bread is free of oil, refined white flour and low in added sugar. It's dense, delicious and packed with banana flavor!

- 2 Flax Eggs 2 Tbsp Flax Meal mixed with 5 Tbsp water
- 2 Very Ripe Bananas Mashed
- 1/2 Cup Unsweetened Applesauce
- 1/4 Cup Coconut Sugar
- 1/2 Cup Plain Unsweetened Almond Milk
- 1 ½ Cup Whole Wheat Flour
- 1 ½ Tsp Baking Soda
- 1 Tsp Baking Powder
- 1/4 Tsp Salt
- 1/2 Cup Walnuts Roughly Chopped
Optional Toppings
- Extra Banana Slices
- All Natural Peanut Butter
In a large bowl whisk the water and flax meal together to make the flax egg, let sit for 5 minutes
Preheat oven to 375°
Line a loaf pan with parchment paper
Add the banana, applesauce and coconut sugar to the flax egg and mix
Add Almond Milk, mix
In a separate medium sized bowl add flour, baking powder, baking soda and salt and mix together
Add the dry ingredients to the banana mixture and stir until incorporated
Gently fold walnuts into the mixture
Pour into loaf pan and spread to even it out
Bake for approximately 45 minutes, bread is done when you can insert a toothpick to the middle and it comes out clean
- Bread may need to be covered with foil halfway through baking to prevent the top from getting overly brown
- Cook times will vary, my oven seems to run a little on the cooler side so take care to check your Banana Bread
