Slice pressed tofu into four slabs, cutting once lengthwise and then each piece in half
In a small bowl mix tofu seasoning together then rub on all sides of tofu slabs. Set aside
Heat a pan over medium high heat
Form sausage into 4 equal sized patties
Cook patties until completely cooked, about 15 minutes depending on the thickness of the patty, flipping half way through
Set cooked sausage aside and lower heat to medium
Add seasoned tofu to the pan and cook for 10 minutes, flipping half way through
Top each tofu slab with a slice of vegan cheddar cheese, cover pan with a lid
Cook for another 3-5 minutes allowing cheese to melt then remove from heat
While cheese is melting toast bagels
Spread mayo on half of each bagel
Build bagel sandwiches by adding the sausage patty, then cheesy tofu followed with 1/4 - 1/2 an avocado. Top with optional hot sauce and the top half bagel.
