Spring Roll Rice Bowls with Spicy Peanut Sauce

This Spring Roll Rice Bowl is full of fresh veggies that pack a punch of flavor and texture. Tossed with Spicy Peanut Sauce this bowl makes for a healthy, filling lunch or easy meal prep option.

Ingredients
  

  • Zucchinni
  • Red Pepper
  • Cucumber
  • Carrot
  • Beet
  • Green Onion
  • Mango
  • Brown Rice cooked and cooled
  • Baby Lettuce Mix
  • Peanuts

For Spicy Peanut Butter Sauce

  • 1 Clove Garlic minced
  • Small Knob Ginger minced (approximately 1 tsp)
  • 1 Tbsp Tamari
  • 1 Tbsp Maple Syrup
  • 1 Tbsp Sambal Oelek
  • ½ Cup All Natural Crunchy Peanut Butter
  • 2-3 Tbsp Water

Instructions
 

Make the Peanut Sauce

  • Add ingredients through Sambal Oelek to a small bowl and whisk
  • Add peanut butter and whisk until incorporated
  • Add water a tablespoon at a time, until the sauce has thinned a bit to your desired consistency and set aside

Assemble the Bowls

  • Place rice and lettuce in bowls
  • Cut your vegetables as desired, for this recipe I use the shredder blade of a mandolin, but any cut will work
  • Add remaining vegetables to the rice bowls
  • Top with Peanuts
  • Drizzle Rice Bowls with peanut sauce and enjoy

Notes

  •  You can swap out the veggies in this recipe for whatever you have available
  • I left amounts out of the recipe for the bowl ingredients, use however much you'd like for the bowls. The sauce recipe as written is enough for 2-4 bowls depending on how saucy you like it
