Sheet Pan Fajita Vegetables

Sheet Pan Fajita Vegetables are the perfect meal prep staple! These healthy veggies are full of smokey, rich flavor with loads of serving options.

Ingredients
  

  • 1 Red Bell Pepper Sliced
  • 1 Orange Bell Pepper Sliced
  • 1 Poblano Pepper Sliced
  • 2 Portabello Mushrooms Caps & gills removed, sliced
  • 1 Small Yellow Onion

For Marinade

  • 2 Tbsp Olive Oil
  • 2 Tbsp Liquid Aminos
  • 1 Tsp Liquid Smoke
  • 1 Large Garlic Clove (or 2 small) grated
  • 1 Tbsp Lime Juice
  • Pinch Salt
  • About 15 turns of Freshly Ground Pepper

Instructions
 

  • Preheat oven to 375°
  • In a small bowl whish all of the marinade ingredients together
  • Arrange sliced vegetables on a sheet pan
  • Pour marinade on vegetables and toss to coat evenly
  • Bake vegetables for 40 minutes, stirring once halfway through, until they are cooked through and starting to char
  • Serve on top of rice bowls or salad, tacos, fajitas or burritos
