- 1 Red Bell Pepper Sliced
- 1 Orange Bell Pepper Sliced
- 1 Poblano Pepper Sliced
- 2 Portabello Mushrooms Caps & gills removed, sliced
- 1 Small Yellow Onion
For Marinade
- 2 Tbsp Olive Oil
- 2 Tbsp Liquid Aminos
- 1 Tsp Liquid Smoke
- 1 Large Garlic Clove (or 2 small) grated
- 1 Tbsp Lime Juice
- Pinch Salt
- About 15 turns of Freshly Ground Pepper
Preheat oven to 375°
In a small bowl whish all of the marinade ingredients together
Arrange sliced vegetables on a sheet pan
Pour marinade on vegetables and toss to coat evenly
Bake vegetables for 40 minutes, stirring once halfway through, until they are cooked through and starting to char
Serve on top of rice bowls or salad, tacos, fajitas or burritos
