Ingredients
  

For the Salad

  • 4 Cups Quinoa cooked and cooled
  • 1 Cup Tomato (about 1 Medium sized tomato) diced
  • 1 Cup Cucumber (about half a large cucumber) diced
  • 1 Stalk Celery sliced thinly
  • 2 Green onions chopped
  • ¼ Cup Red Onion diced
  • 1 Avocado diced

For the Dressing

  • 2 Tbsp Olive Oil
  • 2 Tbsp Red Wine Vinegar
  • 1 Clove Garlic minced
  • 1 Tsp Lemon Juice
  • Salt & Pepper to taste

Instructions
 

  • Prepare the Quinoa as package directs & cool
  • Once quinoa is cooled add all salad ingredients except avocado to a large bowl and mix
  • To make the dressing add all ingredients to a small bowl and whisk until incorporated
  • Toss the dressing into the salad until evenly coated
  • Separate salad into 4 meal prep bowls
  • Add avocado before serving
