For the Salad 4 Cups Quinoa cooked and cooled 1 Cup Tomato (about 1 Medium sized tomato) diced 1 Cup Cucumber (about half a large cucumber) diced 1 Stalk Celery sliced thinly 2 Green onions chopped ¼ Cup Red Onion diced 1 Avocado diced For the Dressing 2 Tbsp Olive Oil 2 Tbsp Red Wine Vinegar 1 Clove Garlic minced 1 Tsp Lemon Juice Salt & Pepper to taste
Prepare the Quinoa as package directs & cool
Once quinoa is cooled add all salad ingredients except avocado to a large bowl and mix
To make the dressing add all ingredients to a small bowl and whisk until incorporated
Toss the dressing into the salad until evenly coated
Separate salad into 4 meal prep bowls
Add avocado before serving
