Vegan Cheesy Horseradish Mashed Potatoes

Vegan Cheesy Horseradish Mashed Potatoes are creamy and cheesy with just a touch of zippy spice, the perfect side to compliment your dinner.

Ingredients
  

  • 6 Medium Sized Yukon Gold Potatoes uniformly chopped - don't peel skins
  • 4 Tbsp Vegan Butter
  • ¼ Cup Plain Unsweetened Almond Milk
  • 3 Tbsp Nutritional Yeast
  • 1-2 Tbsp Prepared Horseradish
  • Salt & Pepper to taste

Optional Toppings

  • Green Onions
  • 1 tbsp Melted Vegan Butter

Instructions
 

  • Add the evenly chopped potatoes to a pot, fill with cold water and season with salt
  • Over high heat bring potato water to a boil
  • Reduce heat to medium high and boil until potatoes are fork tender
  • Drain potatoes and add to a large bowl or the base of a stand mixer
  • Add butter, almond milk, nutritional yeast, horseradish and salt and pepper
  • Beat potatoes until creamy and all lumps are gone
  • Taste and adjust seasoning to taste
  • Top with additional melted butter and green onions if using
  • Serve immediately
