Vegan Cheesy Horseradish Mashed Potatoes
Vegan Cheesy Horseradish Mashed Potatoes are creamy and cheesy with just a touch of zippy spice, the perfect side to compliment your dinner.

- 6 Medium Sized Yukon Gold Potatoes uniformly chopped - don't peel skins
- 4 Tbsp Vegan Butter
- ¼ Cup Plain Unsweetened Almond Milk
- 3 Tbsp Nutritional Yeast
- 1-2 Tbsp Prepared Horseradish
- Salt & Pepper to taste
Optional Toppings
- Green Onions
- 1 tbsp Melted Vegan Butter
Add the evenly chopped potatoes to a pot, fill with cold water and season with salt
Over high heat bring potato water to a boil
Reduce heat to medium high and boil until potatoes are fork tender
Drain potatoes and add to a large bowl or the base of a stand mixer
Add butter, almond milk, nutritional yeast, horseradish and salt and pepper
Beat potatoes until creamy and all lumps are gone
Taste and adjust seasoning to taste
Top with additional melted butter and green onions if using
Serve immediately
