Strawberry Quinoa Salad

This salad is bursting with strawberries and quinoa with a finishing crunch of sunflower seeds. Lightly dressed in a homemade apple vinaigrette this salad makes a perfect quick and healthy lunch and a great option for make-ahead meals!

Ingredients
  

For Salad

  • 2 Heaping Cups Quinoa cooked & cooled
  • 2 Cups Strawberries sliced
  • 1 Cup Cucumbers diced
  • 1 Small Head Green Leaf Lettuce chopped
  • 1 Small Head Red Leaf Lettuce chopped
  • 1/2 Cup Sunflower Seeds plain roasted

For Dressing

  • 2 Tbsp Olive Oil
  • 3 Tbsp Apple Cider Vinegar
  • 1 Tbsp Maple Sryup
  • 1 Tbsp Shallot finely diced
  • Salt & Pepper to taste

Instructions
 

Make Dressing

  • Combine all ingredients in a small bowl or mason jar with lid.  Either whisk or shake until ingredients are well combined.
    Set aside and allow flavors to meld while making the salad.
    Before dressing salad the vinaigrette will need another quick shake or whisk to reincorporate the oil & vinegar. 

Make Salad

  • Once all of the fruits and veggies are prepped toss together in a large bowl.
    If eating immediately toss vinaigrette into salad.
    If making for later, separate salad into meal prep containers and store dressing on the side to add when ready to eat. 

Notes

  • As the recipe is written this salad is very lightly dressed.  For a saucier salad double the dressing recipe.
