Ingredients

Young Jackfruit
rinsed & shredded - the jackfruit will shred easily with your hands

Stalks
Celery
thinly sliced

Cup
Raw Pecans (or Walnuts)
chopped
1/3
Cup
mixed raisins - we use a mix of golden raisins, raisins & dried cranberry
3/4
Cup
Honeycrisp Apple (about 1 small apple)
finely diced
1/3
Cup
Plant Based Mayo

Tbsp
Apple Cider Vinegar
1
Tbsp
Poppy seeds
Salt & Pepper
to taste
Optional:
Crackers, salad mix, bread or tortillas for serving
Instructions
In a medium-sized bowl combine first 5 ingredients and toss together
In a separate small bowl whisk together mayo, ACV, poppy seeds, salt and pepper
Toss the dressing and salad ingredients together until fully incorporated
Serve on toast, with crackers or in a lettuce wrap
Notes
This salad will keep, covered in the refrigerator for 3-4 days.
