This easy breakfast scramble is flavorful and healthy! Make a big batch of this tofu scramble for quick and easy on the go breakfasts through the week. Delicious in a soft tortilla for breakfast tacos or eaten on its own, this tasty scramble will save in your fridge for about 4-5 days!
2Blocks Extra Firm Tofu drained and lightly pressed*
1Poblano Pepper diced
1Anahiem Pepper diced
1Red Bell Pepper diced
1/2 Small yellow onion diced
Salt
Lime Wedge
Optional For Breakfast Tacos
Soft Tortillas
Cilantro chopped
Green Onions chopped
Radishesthinly sliced
Hot Sauce
Instructions
Heat a skillet over medium heat
Once hot, add a splash of water (to prevent sticking and keep this recipe oil free) then add diced peppers and onions
Season with salt & the juice of a lime wedge and cook, stirring frequently until soft and fragrant, about 5-7 minutes
Remove cooked peppers and onions to a bowl
In the same pan, still over medium heat, crumble the tofu into the pan
Sprinkle the tofu seasonings onto the crumbled tofu and cook until seasonings are evenly distributed and any remaining liquid from the tofu has cooked out.
Taste and adjust seasoning if disired
Add the cooked pepper mixture and cook all together for about 5-7 more minutes, giving the flavors time to meld
Serve with tacos, plain or allow to cool and store in your refrigerator for 4-5 days
Notes
Pressing Tofu to remove the liquid is almost always a step you shouldn't skip, for this scramble though I've noticed that if you're short on time just squeezing out as much liquid as you can with your hands will work.
