Once boiling add dry orzo and cook until al dente, 7-9 minutes
Remove orzo from water and allow to cool
While pasta is cooling cut up the veggies
Toss pasta with a bit of olive oil, a squeeze of lemon, salt and pepper
In bowl add hummus, top with remaining ingredients.
Serve with bread, pita, chips and/or veggies for dipping and tzatziki
Notes
There is no set amount for most of the ingredients in this recipe as they are toppings. Love olives? Use a bunch! Not a huge fan of red onion? Just use a sprinkle. This recipe is flexible!About a half a cup of dry orzo should get you 1 cup cooked. I made more though and saved it for use later in the week. Yay for meal prepping!
