Cornbread Waffles with Jalapenos - Vegan

Cornbread gets a tasty makeover with this healthy recipe. Dip the cornbread waffles in spicy syrup, chili or serve with a plate of vegan BBQ.

Ingredients
  

  • 1 Cup Yellow Cornmeal
  • 1 ½ Cup Whole Wheat Flour
  • 1 Tsp Salt
  • ½ Tsp Garlic Powder
  • ¼ Cup Nutritional Yeast
  • 1 ½ Tsp Baking Powder
  • ¼ Tsp Baking Soda
  • 2 Tbsp Maple Syrup
  • 1 Tbsp Apple Cider Vinegar
  • 1 ½ Cup Unsweetened Almond Milk
  • 2 Green Onions chopped
  • 1 Jalapeno seeded & diced

Instructions
 

  • Preheat your waffle iron.
  • In a small bowl or large measuring cup add ACV to the almond milk, set aside
  • Add dry ingredients to a medium sized bowl and whisk thoroughly.
  • Add maple syrup to milk mixture and stir
  • Stir milk into the dry ingredients and mix until mostly combined
  • Add onions and jalapenos to batter and stir until combined, being careful not to over mix.
  • In batches pour batter into heated waffle iron and cook until outside is crispy and insides are cooked through*

Notes

Cooking time and amount made will vary depending on your waffle iron.
This recipe makes three large 4 slice Belgian waffles, as pictured
For my waffle iron, the number 4 setting is the perfect cook time.
