Spicy Watermelon Poke

This Spicy Watermelon Poke is a healthy, delicious, vegan spin on the classic Hawaiian dish. Sweet watermelon is marinated in a spicy soy sauce mixture and served over rice. Top your with bowl crispy fresh vegetables for a nutritious lunch or dinner!

Ingredients
  

For The Watermelon

  • About 3 Cups Freshly Cut Cubed Watermelon
  • 2 Limes juiced - about 1/4 cup
  • 1 Tbsp Grated Ginger
  • ¼ Cup Tamari (or soy sauce)
  • 1 Tbsp Ume Plum Vinegar*
  • 1 Tbsp Sweet Onion very finely diced
  • 1 Tbsp Jalapeno diced

For The Bowls

  • Rice prepared and cooled
  • Edamame prepared and cooled
  • Cucumbers
  • Radishes
  • Green Onions
  • Jalapeno
  • Black & White Sesame Seeds
  • Lime Wedges

Instructions
 

Make the Watermelon

  • Whisk all of the watermelon marinade ingredients together in a bowl
  • Add watermelon and gently toss to coat
  • Let sit for at least 20 minutes, stirring half way through
  • While the watermelon is marinating prepare the bowl ingredients

Assemble The Bowls

  • Add your desired amount of cooked & cooled rice to your bowl
  • Top with vegetables
  • Add watermelon
  • Sprinkle bowl with sesame seeds and garnish with lime wedge

Notes

*Ume Plum vinegar is salty and tart, it adds a great umami flavor. If you can't find it or if you don't want to buy a whole bottle and potentially not use it rice vinegar will work as well. 
For the bowl toppings use whatever portions and vegetable cuts you prefer.
